Who doesn’t love breakfast? I have always been a morning person. Often I feel I’m a minority in a sea of people who love to sleep in until noon on the weekends. I have no trouble getting up early, not even to head out to work bright and early. Why do you ask? Well the promise of coffee and breakfast of course!

Sadly it cannot always be a bacon and eggs kind of morning. I do love a healthy breakfast alternative however, so these muffins are perfect for that. It’s always nice to switch it up from the regular boring granola or oatmeal and these muffins are like eating a bowl of sweet oatmeal!DSCN0108

What you need:

-1 egg
-1/2 cup pumpkin puree
-1/2 cup milk
-1/4 cup light brown sugar, packed
-1/4 cup canola or vegetable oil
-2 teaspoons vanilla extract
-2 teaspoons cinnamon
-3 cups old-fashioned whole rolled oats
-2 teaspoons baking powder
-3/4 cup semi-sweet or dark chocolate chips



-Preheat your oven to 350°.

-In a large bowl, mix the egg, pumpkin, milk, sugar, oil, vanilla, and cinnamon together.

-Then mix in the oats and baking powder until combined.

-Stir in the chocolate chips until just combined.

-Fill muffin cups almost to the top (these muffins don’t rise so however you fill them will be pretty much the size they bake to.) This recipe makes about 10 nice size muffins.

-Bake for about 18-21 minutes, or until golden around the edges. Mine baked for 19 minutes and they were a really nice, soft consistency.


The muffins are really amazing! Seeing as how there is no flour in this recipe, it is mostly oats so they actually feel like a very healthy and satisfying breakfast. The pumpkin and chocolate chips add just enough sweetness without the added sugar. They can be adapted to your tastes as well, so throw in some cranberries or some nuts and voila! you have granola-oatmeal muffins!

It was the first time I had tried out this recipe and they were all gone within 2 days. So customer satisfaction is a 10!
