Easter is just around the corner and t’s one of my favourite times of the year.  Cadbury mini eggs and creme eggs and cakes oh my! It’s a fantastic time for bakers because there’s so much possibility. It’s basically encouraged to make a dessert that’s as sweet and as colourful as can be.

So as you can see in the photo below, I bought some colourful eggs. Not just any candy eggs though. These magical things you see are Reese’s  pieces Easter eggs. I discovered them last year and thank god they are only available around this time because I would most probably live off of them..DSCN0146So I bought them and after really savouring a couple of handfuls I decided that they needed to be shown off. What better way to do this then on top of a dessert? Now I know that peanut butter candy and lemon are not usually paired together but I was really in the mood for a nice and fresh Spring dessert. What’s nice about these little cakes is that you can easily add ingredients to them like coconut or a Jam center.DSCN0129

For the cakes:

– 1 1/2 cups flour

-1/2 tsp baking soda

-1/2 tsp salt

-1 cup butter, softened

-3/4 cup brown sugar

-3 eggs

-1 large lemon, zested

-3 tablespoons lemon juice

-1/2 tsp vanilla extract

Icing:

-1 cup of confectioners sugar

-3 tablespoons  lemon juice

-1 teaspoon butter

-2 tsp milk

Next:

-Preheat your oven to 350°.

-In a medium mixing bowl, mix you flour, baking soda and salt together.

-In a stand mixer or with an electric mixer, cream the butter and sugar together until fluffy (about 2-3 minutes.)

-Add the eggs one at a time, mixing well after each.

-Then add the zest, lemon juice and vanilla extract and mix well

-Add 1/2 of the flour mixture and the yogurt and mix. Then add the other half of the flour mixture and mix until just combined.

-Pour the batter into your greased bundt pans (I made roughly 4 mini/medium sized cakes.)

-Bake for 13-15 minutes until a toothpick inserted into the middle comes out clean.

*If you’re making one larger bundt cake, extend the baking time.

-Let cool completely before icing the cakes.

For the icing:

-Mix all ingredients together and pour over the cakes as you wish!
